Brat and Pepper Tacos

  • 3/4 lb Bratwurst, halved lengthwise and sliced crosswise into 1/3-inch-thick pieces
  • 1 bunch Scallions or Green Onions
  • 2 Poblano Chiles, halved seeded and sliced
  • 1 Red Bell Pepper, sliced
  • 3 tbs Olive Oil
  • 1 ripe Mango
  • Kosher Salt, to taste
  • Pepper, to taste
  • 12 Corn Tortillas, warmed
  • Cabbage

Preheat the grill to 425°. Grill peppers, sausage, and scallions for about 12 minutes, until the sausage is browned and the peppers are tender. Cut mango into cubes and toast tortillas in an empty and unoiled skillet. Assemble tacos and serve warm
