Queso Fundido

  • 1 pkg Mulay's Chorizo
  • 1 medium Yellow Onion, diced
  • 2 Poblano Peppers, roasted, peeled, diced
  • 1 (8 oz) pkg Shredded Cheddar Cheese
  • 1 (8 oz) pkg Shredded Jalapeño Jack Cheese
  • 1 (12 0z) bottle Amber Beer, preferred Dos Equis XX Amber
  • 1/2 bunch Fresh Cilantro, coarsely chopped
  • 1 medium Tomato, diced
  • Salt & Pepper, to taste

Heat a large, heavy skillet on medium-high, add the ground chorizo, and cook, chopping until fine, for approximately 5 minutes. Slowly add the onions and peppers. Sauté́ over medium-high heat for approximately 5 minutes until all are soft. Add salt and pepper to taste, stir well. Add the beer to the skillet and allow to cook for 2-3 minutes. Slowly add the cheese, a hand full at a time, mixing well between each batch. Turn heat to low and simmer uncovered for about 5 minutes, stirring occasionally. Remove from heat. Add the cilantro and stir to combine, then top with the diced tomatoes. Serve with your favorite tortillas chips.
